A new and simple way to prepare the humble potato – this delicious recipe has taken the net by storm

Potatoes are a staple of most people’s weekly dining plan, after all the average American consumes more than 120 lbs of potatoes every year.

When people think of preparing potatoes the usual often comes to mind: mash, baked or boiled which works just fine for your average weekday meal, but what about for those special occasions?

When I discovered this next recipe, I couldn’t wait to try it. It has all the ingredients I love to help turn the humble potato into something spectacular.

You will need:

2 lb Yukon Gold potatoes, peeled
2 tbsp butter, melted
2 tbsp olive oil
2 tbsp chopped fresh rosemary
3/4 tsp salt
1/4 tsp pepper
1 cup low-sodium chicken broth
garlic cloves, finely minced

Step 1:

Peel and slice the potatoes into ¾”-1” slices. Then put in a medium bowl.

Step 2:

Cover your sliced potatoes with melted butter, olive oil, rosemary, salt and pepper. Stir.

Step 3:

Lay the potatoes flat, in a single layer, on a metal baking dish. Do not use a glass baking dish, as pouring the chicken broth into the hot pan could resulting in the glass cracking.

Bake in a 500 degree pre-heated oven for 15 minutes.

Step 4:

Remove the dish from the oven and flip each potato. Bake for another 15 minutes, until the other side of the potato is golden brown.

Step 5:

Add the chicken broth and chopped garlic. Return to the oven for 15 minutes.

Serve warm with extra sauce drizzled on top.
