We may all think we know what a pancake looks like but wait until you see these Japanese pancakes. The end result gives you a stack of impressively tall pancakes which are among the fluffiest I’ve ever seen.

Unlike the usual, thin pancakes we’re used to, these Japanese pancakes are so tall and fluffy. They are also flavored with either lemon or vanilla … and the result is just heavenly.

You will need:
• 1 1/2 cups all-purpose flour
• ¼ tsp baking soda
• ½ tsp baking powder
• A pinch of salt
• 1 egg yolk + 3 egg whites
• 25 grams melted butter
• 30 grams sugar (to add to the egg whites)
• 150 grams buttermilk
• Zest of 1/4 of a lemon ( if you’re not adding lemon zest add 1 tsp vanilla) DO NOT skip the flavorings.
• 1/4 tsp cream of tartar or 1/2 tsp lemon juice
