Cheesecake stuffed cookies: The dream is true

When it’s sunny outside there’s no better time to gather friends for food and fun.

Preparing food for these occasions seems a lot simpler in summer: something grilled and plenty of fruit, snacks and dips.

When it comes to a sweet treat, the usual suspects spring to mind: cheesecake, ice cream and anything else you can serve cold.

But what if you wowed your guests with a new take on cheesecake, like wrapped in a chocolate chip cookies?

When I saw this recipe for Cheesecake Stuffed Cookies I couldn’t wait to try it, and although the prep and baking time takes around an hour, it’s worth it for these 24 heavenly treats.

INGREDIENTS

FOR THE COOKIES

2 1/2 sticks unsalted butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 tsp vanilla extract
2 large eggs
2 3/4 cups all-purpose flour
1 tsp baking soda
3/4 tsp salt
2 cups semisweet chocolate chips

FOR CREAM CHEESE FILLING

12 oz cream cheese, softened
1/2 cups powdered sugar
pinch of salt

METHOD

Preheat oven to 375ºF and line a large baking sheet with parchment paper.

To make the cheesecake filling combine cream cheese, powdered sugar and salt in a small bowl. Mix well until mixture is smooth. Cover with plastic wrap and refrigerate until slightly firm, about 30 minutes.

To make the cookie dough beat butter and sugars until light and fluffy, about 2 minutes. Slowly beat in vanilla extract and eggs.

In a separate bowl, mix flour, baking soda and salt. Stir into butter-sugar mixture. Fold in chocolate chips. Place dough in refrigerator to firm up for about 10 to 15 minutes.

Then scoop about a tablespoon of the cookie dough and flatten into circle. Spoon about 2 teaspoons of the cheesecake filling in the center.

Form another tablespoon of cookie dough into a flat circle and place on top of filling. Pinch the edges together to seal, then roll the filled dough into a ball.

Bake cookies for 12 to 15 minutes, or until lightly golden.
